What's Kimpira gobo?


Kimpira Gobo: Fried burdock root cut into thin slices.

This dish is said to have been given this name 350 years ago.

Even then, this root vegetable gobo (black salsify) was considered very nutritious and extraordinarily refreshing.

The name came from the fact that a hero in the puppet theater of that time, called Kimpira, was incredibly strong. Therefore, the dish prepared from this vegetable was called Kimpira.

Kimpira gobo was made with sugar and soy sauce. This is one of the representative side dishes of Japan.
